I found this recipe on Reddit, and it looks so good, I’m hoping that they’re good shippers.
- 2 1⁄2 cups semisweet chocolate chips, divided (2 c. / 1⁄2 c.)
- 1 stick unsalted butter
- 1 cup / 125g all-purpose flour
- 2 tablespoons Dutch-process cocoa powder
- 1 teaspoon baking powder
- 1⁄2 teaspoon kosher salt
- 3 large eggs
- 1 cup granulated sugar
- 1⁄3 cup packed light brown sugar
- 2 teaspoons pure vanilla extract
Add 2 c chocolate chips to a small mixing bowl. Melt the butter (either in the microwave or on the stovetop), and pour it over the chocolate chips. Let stand for several minutes. After 3-5 minutes, stir the chocolate and butter until combined and smooth. Set aside. Let cool to room temperature.
While the chocolate mixture is cooling, sift together the flour, cocoa, baking powder, and salt in a separate medium bowl.
Add eggs, granulated sugar, brown sugar, and vanilla to the cooled chocolate mixture & mix until thoroughly combined. Slowly add the flour mixture to the chocolate mixture, and mix until thoroughly combined. Add the remaining 1⁄2 cup chocolate chips, and mix briefly to incorporate fully.
Place the bowl in the fridge to chill for 45 minutes. Preheat oven to 350°. Line 2 large baking sheets with parchment paper.
Using a 1-ounce scoop, working in batches, place the chilled cookie-dough balls 2 inches apart on each baking sheet.
Bake until the edges are set, 12 to 14 minutes. The centers of the cookies will appear and feel soft when hot but will set as they cool. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container for up to 5 days.
