I’m late to this, since he posted it in early July, but Mark Bittman gives 101 fast recipes geared towards picnicking that’s well worth checking out. Be sure to also check out his excellent ideas for 101 Simple Appetizers, 101 Quick Meals, and  111 More Quick Meals. (The New York Times seems to have only kept the first 10. Here’s another site that has the rest.)
